Preparing plums

1) Pit and half plums: put in pot until full

2) Add 1/2 cup water to every 30 medium plums: boil gently 5 min

3) Put through blender or processor with chopper until chopped finely (will have to be done in batches to fit processor)

*Have canner, jars and lids ready.

Directions

4) Measure out 4 1/2 cups prepared plums to 7 1/2 cups sugar. Bring mixture to full boil that cannot be stirred down. Add the pectin and boil hard for 1 more minute, stir constantly. Remove from heat .

5) Skim off foam

7) Process 20 minutes

8) Remove from canner and cover over night. Store in cool place

Preparing Plums

1) Pit and half plums: put in pot until full

2) Add 1 cup water to every 36 medium plums: simmer 10 min, stir occasionally

3) Put through food mill (if you don’t have a food mill, then the plums need to sit over night and run through a cheese cloth)

4) After putting through food mill, run through cheese cloth in a colander(Do not squeeze or it will be cloudy)

*Have canner, jars and lids ready.

Directions

5) Put 6 1/2 cups sugar to 4 cups prepared plums in pot. Bring mixture to full boil that cannot be stirred down. Add 1 pouch liquid pectin and boil for 1 more minute. Remove from heat and skim off foam.

6) Jar and seal.

7) Pour jelly in jars.

8) Put jars in canning processor and 20 min.

9) After 20 minutes, put jars on a towel and cover over night. Store in cool place.

Fall Arrangement Craft Idea

Things you need

1) Different fall arrangements

2) Stick-on decorations

3) Burlap

4) Twine

5) Styrofoam

6) Scissors and wire cutter

7) Cutting board

Fall Arrangement1

Start by separating the fall arrangements into single stems. Cut to down-size the stem. Take the scrapped piece from the down-sized stem and use for the sticky decorations and stick two together onto the stem so that it is double-sided. Now you have different pieces to work with in creating a center piece arrangement.

Once the Styrofoam and burlap is put together begin sticking the fall leaves. berries and ornament into the Styrofoam.

Tomato Soup

Directions

1) Put tomatoes and chopped red peppers in a large pot. Cook until peppers are cooked. Put through Food mill to remove seeds and skin from tomatoes and skin from red peppers.

2) Put the strained tomato and red pepper juice back into large pot and add vegetables and seasoning except sugar and salt and pepper. Bring to boil. Reduce heat and boil gently until vegetables are tender. Remove the bay leaves.

3) Puree soup in small batches in processor or blender. Return to pot and add brown sugar and salt and pepper to taste. Heat to boil.

4) Put in jars, seal and process in canner.

5) When processing is complete, leave jars on the counter and cover over night. Store in cool place.

 

Ingredients

16 cups of chopped and cored tomatoes (if you don’t have a fine strainer then the tomatoes need to be also peeled and peppers finely chopped)

2 cups chopped red peppers

3 1/2 cups chopped onion

2 1/2 cups chopped celery

1 cup sliced carrots

7 bay leaves (these will need to be removed before pureeing soup)

1 tbsp basil

1 clove garlic

1 cup lightly packed brown sugar

salt and pepper
